Quiche recipe has become famous for it is a delicious, simple and very versatile dish. It can adapt to all our cravings and to whatever we have available in our fridge, cupboard or in the freezer.
But where does this funny word come from?
Origins of Quiche recipe
The word quiche probably takes its origins from the French Lorraine dialect Küche, which meant “pie” or “cake”, and which also gave kuchen (for “cake”) among our Germanic neighbors. It was at the very beginning of the 17th century that we found the use of the word quiche in the accounting writings of a Nancy hospital. More simply called tarte, fouace or even eschaude, quiche officially appeared in the French language in 1869, in Littré (french dictionary).
Originally, it is indeed the Lorraine quiche which is at the origin of all the quiche recipes known today.
What are the ingredients for a good quiche?
In a quiche preparation there are 3 parts: the crust, the batter and the toppings.
Ingredients for the best crust for quiche
The crust of a quiche is highly important, it is the base of the quiche and it can make the difference between a good quiche and a delicious quiche.
Making a crust is so fast and so much healthier than the ready made ones. With this crust recipe you will never ever buy a crust from the shop anymore.
Main ingredient of this salty crust is obviously the wheat flour, an all purpose wheat flour is fine. Then we have the salt, oil and water. To twist your crust you can add other spices, herbs (oregano) or even cheese. These are all very simple, cheap and easily available ingredients.
You can use this crust recipe as a base, and twist it the way you want, it will make your quiche taste different, adapt and enhance the toppings you chose for your quiche recipe.

The batter can be used and reused for other recipes. It is a great recipe for any salty pie or quiche you wanna make.
For this batter we use eggs, milk, nutmeg, salt and pepper.

For the toppings, your imagination will be the only limit! As we said, quiche recipe is a very versatile dish that can adapt to your tastes and available ingredients. In our home, quiche is a good way to prepare a healthy dinner stocked up on veggies that everyone enjoys including my kids 🙂
You can choose any veggie, or meat you like.
In this recipe I’ll explain you my quiche recipe with leek. It is a good way to eat leak during spring and summer. In fact, I usually use leek in my soups during the winter season.
Why I like this leek recipe is because leak is packed with amazing benefits for health.
Health Benefits of Leek
Long called “poor man’s asparagus”, leek is not short of nutritional properties. Very little sugar, low in calories and rich in fiber, it fits very well as part of a slimming diet or a body detox. It is also very well supplied with various minerals and trace elements, particularly calcium, potassium, phosphorus and magnesium.
In terms of vitamins, beta-carotene (pro-vitamin A) predominates, followed by vitamin B9 and vitamin K.
Finally, leek contains sulfur compounds, known for their numerous effects on health, particularly in the prevention of cardiovascular diseases and cancers.
The other ingredients that we will be using for this quiche recipe are grated cheese, onion, olive oil, butter, curry powder (optional) and white wine (optional).
How to make a quiche?
First of all we will prepare the topping, then the crust and finally the batter.
Topping preparation
First we will peel of the onion and cut it into small dices. If you are using fresh leek, wash it and cut it in rings.
First of all, we will add the olive oil and the butter. When it is hot enough add the onions and let them cook until they turn golden. Once the onions are ready, we will add some curry powder any other spice you like. Mix well and then add some white wine and mix again, let it cook for 30 seconds. Then add the leek rings. Mix them well so they can all be covered with the onion mixture. Then cover en let it cook slowly for about 20 to 30 minutes.
While the leek preparation is getting cooked, we’ll take care of the crust.
In a big bowl add the dry items, wheat flour, salt, and the curry powder. Mix well. Then add the olive and the water gradually to get to the perfect texture (not too dry and not too humid).
Mix all the ingredients with your hand until the dough does not stick to the bowl anymore, knead a little bit more and make a nice ball with it. If your dough is too sticky add some more flour and if it is breaking add some more water.
Crust preparation
Prepare your pie plate, by covering it with a layer of butter, and then add a wheat flour layer on it (remove the excess flour by tapping the mold). Now put some wheat flour on your table, put your dough on and flatten it with a rolling pin, to make a circle of the size of your pie plate. Place the dough on the pie plate and, press the sides of the plate so the dough is well in place and stick to it.
At this stage you can switch on the oven to 356°F / 180°C.
Quiche preparation
On the dough add the cheese, then take the leek topping from the pan with a skimmer or a strainer (to remove the excess of liquid) and add it on, and finally pour the batter to covet all it all. You can optionally add extra cheese on the batter at the end.
Once the oven is at the right temperature, place the quiche into the oven for about 35minutes, until the top of the quiche got a nice brown color.
Once cooked, let it cool down and then serve with a lettuce salad. It is as delicious hot than cold.

Beat the eggs in a big bowl. Add the milk, the nutmeg, some salt and pepper and mix well.

- On the dough crust add the cheese, then take the leek topping from the pan with a skimmer or a strainer (to remove the excess of liquid) and add it on, and finally pour the batter to covet it all. You can optionally add extra cheese on the batter at the end.
- Once the oven is at the right temperature, place the quiche into the oven for about 35minutes, until the top of the quiche gets a nice brown color.
- Once cooked, let it cool down and then serve with a lettuce salad. It is as delicious hot than cold.
