Origins of Mayonnaise
Mayonnaise is believed to be born in 1756 in Spain, more precisely in Mahon, the capital of Menorca. Marshal de Richelieu, celebrating his victory, was served a sauce by his cook who only had two ingredients: eggs and oil. It would have been named Mahonnaise in homage to the city. Mahonnaise became Mayonnaise.

- Egg
Always make sure to have the eggs at room temperature. Before using the eggs get them out of the fridge for minimum 30 minutes.
Oil
- Sunflower oil
To allow the emulsification with the egg. Always go for a good quality oil
- Salt
- Pepper

Homemade mayonnaise recipe
This homemade mayonnaise recipe will take you only 3 minutes with a hand blender! It is delicious, creamy and unmissable.
For 1 1/2 cup (350ml) of mayonnaise
Instructions
- In a high container, break the egg, add the mustard and half a cup of oil.
- Place the blender right on the egg at the bottom of the container and mix like this for 30 seconds. Then continue blending by slowly moving up and down in order to add air to the preparation.
- When the mayonnaise starts becoming more form, add the rest of the oil in drizzle and continue mixing slowly with up and down movements. Mix until oil is over and the mayonnaise becomes firm.
- Add salt, pepper and the vinegar and mix again. Taste test and adjust if necessary.
- Keep the mayonnaise in the fridge.
- Consume within 48h to 2 hours.
