However, even during hotter season I love serving cold mushroom soup.
This mushroom cream soup recipe can be prepared with any kind of mushrooms you have around or that your prefer.
Here, once the season start we love going to the forest and pick them up fresh and 100% natural. From the nice smelly forest grounds to our plates :)
There are so many kind of mushrooms, each of them can be used in this creamy recipe, and each one will give a different character to your soup.
Let's see the most common varieties that can be found mainly in America and in Europe.
The most common mushroom in the u.s like in many part of the world is the Agaricus Bisporus better known as the button mushroom.
Button mushrooms are actually the young form of the mushroom called Agaricus bisporus. They are picked early, before their caps have fully opened, which is why they remain small with a tight, closed cap—hence the name "button" mushrooms. Did you know that the cremini, portobello and button mushrooms all come from the same species Agaricus bisporus, they are just picked at a different stage of growth!

Chanterelle mushrooms usually thrive in both deciduous and coniferous forests. They often grow alongside specific tree types, including oaks, beeches, and pines. While these mushrooms generally emerge in late summer and autumn, the precise timing can differ depending on the region and local climate conditions.
In the kitchen, Chanterelles are cherished for their subtle, fruity taste and hearty texture. Some of the favorite methods to cook and savor chanterelle mushrooms are sauté, in soups, in risottos and pasta, grilled or roasted, and also in pickles!
If you have chanterelles growing around your area, and you want to pick them up, first, make sure that they are chanterelles and not another species that resembles. Second, Make sure to clean the mushrooms very well with a brush or with water to remove all the dirt that can hide in the ridges. Do not let them soak in water though, as it will absorb moisture.
In terms of health benefits, the Chanterelle containsa good quantity of proteins (2 g/100 g), this mushroom also contains a very large quantity of minerals. Potassium, phosphorus and iron, but above all an extraordinary quantity of selenium.
Shiitake mushrooms are known all over the world. They are very common in Asian dishes and the passion for this mushroom has now reached western countries. Their unique, savory (umami) taste and a meaty, chewy texture are the reasons of its popularity. When cooked, their flavor becomes even richer, which is why they are used in many recipes. If you have the possibility to pick up the mushrooms directly from a nearby forest or even to grow them in your home then it is always better, as you know how they have been made of.
However, if you don't have time or anywhere to get them from mother nature you can buy them from the shop fresh or even frozen. Your mushroom soup will still be creamy and yummy ;).
Before starting the preparation of our soup, we need to wash the mushroom very well. Do not soak them into water as they will absorb the moisture. Simply wash them with water with your hands or with a cloth/soft brush.
Once they are well washed, place the on a cloth so all the water can be removed.
What I love with this soup and many soups actually, is that it is simple and made with common ingredients, that we all have in our kitchen. Also, a mushroom soup is super healthy and super cheap to prepare which is I feel a very important point nowadays :)
Mushrooms can be fresh or frozen, the soup will still be creamy. Any kind of mushroom will do. Whenever you change the mushroom variety then you will get different taste to your mushroom soup. Moreover, each mushroom will have specific health benefits.
In our soup recipe, we will use only butter. The butter will bring creaminess and a nutty taste.
We will use flour to give a bit of coating to the mushrooms and thickness around it
The Lemon juice will add a bit of tangy taste that will enhance the mushroom flavor.
Cilantro will add a bit of lemonish leafy taste , and cilantro is such a superfood that it can be added anywhere.
Sour cream will bring the creaminess to the mushroom soup, it will also add that milky taste that goes so well with mushrooms.
